Ingredients for grilled vegetables
Vegetables – Choose a selection of fresh vegetables from the list above or use what’s in your fridge. If you use firm vegetables, you can slightly pre-cook them (e.g. potatoes, carrots or cauliflower).
Spice mix – This spicy spice mixture gives the vegetables flavor. After cooking, I like to sprinkle it with fresh herbs from the garden like basil, parsley or cilantro.
How to grill vegetables
Grilled vegetables are easy to prepare and taste delicious!
- Toss the prepared vegetables in the spice mixture on a rimmed baking sheet.
- Grill vegetables on a preheated grill, grill basket, or grill mat until desired doneness.
- Garnish with fresh herbs or lemon wedges if desired. Serve warm.
Fast and aromaticGrilled vegetables can be cooked on the grill alongside steak, salmon, shrimp skewers or chicken. Dead easy!
Tips for perfect grilled vegetables
- Timed coordination: For best results, be sure to turn vegetables frequently as some cook faster than others. Set the cooked pieces aside and when they are all cooked, you can wrap them in foil and keep them warm on the grill or in the oven until ready to use.
- Portion: Sprinkle finished vegetables with Parmesan cheese or fresh herbs before serving. You can also drizzle them with chimichurri or pesto.
- Food preparation: Grill an extra portion or two and enjoy as a side to salads, stirred into pasta sauce, or served as wraps for weeknight lunches.
- Leftovers: Store leftover grilled vegetables in an airtight container for up to 4 days.
