Fried mushrooms are underrated. Prove me wrong: If you have mushrooms that you need to use up in the fridge, do you think roasting them is the first way to prepare them? My guess is not. Many of us tend to roast mushrooms on the stove rather than in the oven.

But as delicious as sautéed mushrooms are, I would argue that roasted mushrooms are too even better. They’re crispy around the edges, meaty in the middle, and full of savory umami flavor. Plus, they roast on a single sheet pan in under 30 minutes.

Below I share my easy roasted mushrooms recipe. Serve it as a weeknight side dish or prepare it for a holiday meal. It’s as simple as it is flavorful and goes well with any meal.

Here’s what you’ll need for this roasted mushrooms recipe:

  • Mushrooms, Naturally! Stick with white mushrooms or creminis, or experiment with a mix of different varieties. Check out my favorite guys in the legend below!
  • Extra virgin olive oil – It helps the mushrooms brown and soften in the oven.
  • balsamic vinegar – For sweet, spicy taste.
  • Tamari – It brings out the umami flavor of the mushrooms. Soy sauce also works, but be sure to use certified gluten-free tamari if you want this recipe to be gluten-free.
  • Fresh herbs – Parsley and thyme offer a fresh, aromatic contrast to the deeply spicy mushrooms.
  • And salt and pepper – So that all the flavors come into their own!

Which type of mushroom is best for frying?

One of the reasons I love this roasted mushroom recipe is that it goes well with a variety of mushrooms.

Cremini mushrooms (also known as baby bellas) and white button mushrooms are both good options, but for an upscale side dish, I recommend mixing in other varieties as well. Try one of these methods:

  • Oyster mushrooms
  • Shiitake mushrooms
  • Postage free
  • Maitakes
  • Beech mushrooms

How to roast mushrooms in the oven

The first step in this recipe is cleaning the mushrooms. Wipe away dirt and debris with a damp paper towel.

  • Tip: Do not wash the mushrooms under running water. They absorb it like a sponge and don’t get crispy in the oven.

Next, chop them. Quarter or halve small mushrooms with hats. Tear or cut other varieties into bite-sized pieces.

Then season the mushrooms. Place them on a large baking sheet and drizzle with olive oil, vinegar and tamari. Sprinkle with several peppercorns. Stir well to coat and spread into an even layer.

Roast the mushrooms at 450°F 18 to 20 minutes or until tender and golden brown. Stir halfway through cooking so they brown evenly.

Remove from oven and season with parsley, thyme and salt and pepper. Enjoy!
