Here’s what you’ll need to make this air fryer potato recipe:

  • potatoes, Naturally! Halved small red potatoes or yellow potatoes work great for this recipe. If you can’t find baby potatoes, use larger Yukon Gold or other yellow potatoes cut into 3/4-inch pieces. I don’t recommend using russet potatoes here. With their starchy consistency, rust mushrooms are better for making French fries in the air fryer!
  • Extra virgin olive oil – It helps the potatoes brown and soften when cooked.
  • Garlic powder – For a savory umami taste.
  • Italian spice – Make your own Italian seasoning or buy it at the store. In a pinch, dried thyme is a great substitute.
  • Fresh parsley – For a bright green color and a touch of fresh taste. Other fresh herbs would also taste good here! If desired, replace the parsley with thyme, chives, or dill.
  • And salt and pepper – So that all the flavors come into their own!

This air fryer potato recipe is easy to make. That is how it goes:

First chop the potatoes. Halve or quarter baby potatoes, or cut larger potatoes into 3/4-inch pieces. No peeling necessary! The potato skins become nice and crispy in the oven.

Next, season them. Place the potatoes in a large bowl and toss with olive oil, garlic powder, Italian seasoning, salt and several grinds of pepper.

  • Don’t peel the potatoes. I’m often asked by readers whether you should peel vegetables before cooking. When it comes to potatoes, I’m in favor of leaving the peel on. They get so crispy in the air fryer! Simply scrub the potatoes thoroughly and pat them dry before chopping them.
  • Cut them into evenly sized pieces so that they cook at a similar speed. Turning the potatoes halfway through cooking also ensures even browning.
  • Work in batches if necessary. To make crispy potatoes in the air fryer, Do not overfill the basket. Instead, fill it with a single layer of potatoes, leaving some space around each one. The extra space allows the hot air to touch them from all sides, which promotes browning. Without them they would steam and become soft. Depending on the size of your air fryer, you may want to cook the potatoes in batches to avoid overcrowding.
