Easy Appetizer Recipes: Deviled Eggs
Serves 8th
- 6 Big eggs
- 3 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon Apple cider vinegar or dill pickle brine
- Hot sauce, such as Tabasco, optional
- Sea salt and freshly ground black pepper
- Paprika, chives and/or fresh dill for garnish
Prevent your screen from going dark

Place the eggs in a medium saucepan and cover them by 1 inch with cold water. Bring to a boil, then cover the pot and turn off the heat. Let the eggs rest, covered, for 10 to 12 minutes, depending on desired doneness (see photo in this hard-boiled egg recipe).

Place the eggs in a bowl of ice water and chill for 14 minutes or until completely cool.

Gently tap the eggs on the counter to break the shells, then peel them. I like to do this under cold running water so the peels slide off easier. Pat dry if necessary.

Halve the peeled eggs lengthwise. Carefully remove the yolks with a small spoon and place them in a medium bowl. Set the egg whites aside.

In the bowl with the egg yolks, add mayonnaise, mustard, apple cider vinegar and, if using, a dash of hot sauce. Mash with a fork until creamy and then season to taste with salt, pepper and additional hot sauce. For a smoother deviled egg filling, pulse the mixture in a food processor.

Divide the filling over the egg whites and garnish with paprika, chives and/or fresh dill.
